Right now my system is running with 2x Corsair CMX512-3200LLPT for 1 GB in dual channel. I would like to add 1GB of Corsair XMX1024-3200C2PT but I am unsure if I would run into any compatibility or timing issues by using 3 sticks of RAM. The link the the RAM I want to order is: http://www.newegg.com/Product/Product.asp?Item=N82E16820145560

When I add the RAM, should I put the 2x 512 on one channel and the 1 GB on the other channel?

System Specs:
Abit NF7-S V2
2x 512 MB Corsair RAM (DIMM Slot 2 & 3)
Athlon XP 2800+ Barton
Nvidia GeForce 6800GT AGP

No. you should buy 2 x 1 gig. With three modules you will run DDR333 max with a command rate of 2T (about a 5% penalty). 2 x 1gig will overclock better than 2 x 512 + 1 x 1gig, heck, even your existing 2 x 512 may OC better than 2 x 512 + 1 x 1gig.
