What exactly does CAS Latency do? And is there really any noticable difference between 2.5 and 3 CAS?

All memory is rated to run at a particular latency; the lower the latency, the faster it operates. In all honesty, there is probably no noticeable difference between 2.5 and 3.0 in most tasks, unless you benchmark.

If you overclock, or plan to, rated latencies can have a bigger effect at higher memory clock speeds, and they can also determine how high your memory will clock.
