RAID Standards?

Ok, say if I have a RAID 0 & RAID 1 array on this motherboard controlled with a certain RAID controller, if I switch to another motherboard with a different RAID controller chip will I be able to use my RAID arrays again?

Also...with RAID 1:

Are both disks able to be used individually, or are they setup special for RAID 1? Like if I have a pair of RAID 1 disks, and then one dies, can I just plug the working drive into a standard IDE controller & use it like a normal drive?
 
Many RAID solutions place "Metadata" on the drives to indicate configuration and status information. This is common with hardware controllers but I dont have personal knowledge of the software solutions. I wouldnt count on being able to move the drives to another controller and have it work. Perhaps someone will have tried it and post their experience.
