I decided to go raid for gaming, can't say I'm very impressed by Raptor speeds.

First of all, is thinking of going raid 0+1...I can't afford raid 5.

Secondly, I currently have the Raptor as main drive running XP, and WD Caviar 640GB 7200 3.0Gb/s for games/programs. If I want to convert everything on this drive to Raid, do I have to copy the entire contents over to another drive, and then copy back over once I get the raid setup, or is there an easier way?

Lastly, what is a good value brand of Raid card? Motherboard doesn't support it.

Have you looked into the actual benefit of RAID for gaming? Anandtech's done a couple studies on the subject.
