I've run raid0 on three different rigs over the past 2 years without any problems. Of course if you lose one drive you lose the usable data on both. On various RAID 1 and RAID 5 setups at work locations, I do see drive failures of maybe 2% a year. But then again, these drives are heavily hit and spinning 24/7.
I love raid0 at home because it's so fast and I have only one drive letter mapping for 240GB of data. But I use it for MP3s, Videos, ripped DVDs, etc., so I either have the original media or I back things up. So if I do lose a drive, I'm only out the replacement costs and some rebuild time.
If you had the money and space in your case, you could add 4 drives and do a raid0+1 and have both striping and mirroring. That way you could lose any one drive and be able to rebuild without the need to restore anything.
Really, over six years of my own home PCs (and wife and kids, too) I've never lost a drive. Just backup your important stuff (i.e. it never rains when you pack your umbrella).
