Is it possible to run 2 160GB drives partitioned into 4 parts without causing problems with a RAID1 configuration? 80x80x80x80?

You can setup a RAID1 first then you partition it
Anyway this isn't highly technicle. GH would do

Well I am curious of how that will effect the raid 1 functionality...improve it? Higher risk of data loss and why?

no. No effect what-so-ever

RAID 1 basically combine 2 HDD into 1. If you make a partition on the virtual "HDD", the RAID controller partitions both physical HDDs. The operation is identical. That's why RAID 1 is called "mirror"
