RAID 0 plus additional HD--Set-up Advice

I currently have 2 WD 120GB 8MB cache hard drives set up in a RAID 0 with a Highpoint Rocket133 RAID controller. The computer came with this set-up, and was partitioned into a 220GB NTFS partition (C drive) and a 3GB FAT32 partition (D drive). I believe the latter is for system back-up purposes, but I really don't know for sure.

I'm thinking about getting an additional WD 200GB hard drive to serve as a back-up for the RAID. Does anyone have any suggestions on partitioning, system positioning, etc.? I'm not looking to spend a lot of time reinstalling Windows or other programs, so simpler is better. That said, if there's an optimal way to boost speed/performance, I'd love to hear about it. As an FYI, I plan on doing a fair amount of digital video editing. I've already eaten up about 30GB with 2 home videos.
