Raid 0+1 setup, how does raid see partitions?

I have 4 40G hard drives and have not setup raid before. I want to partition the drive or should I say the array so my OS and programs are seperate from the data files. I have an SCB2 mobo with Promise PDC20267 Raid controller on board also running Win2Kserver, Cold Fusion, SQL server database and will be doing credit card transactions monthly. The site itself will be updated twice per week and I will need to have redundancy for all the above. I was considering Raid 0+1 or Raid 1 alone but I do not know how the partitions fit in to this? Will there be a mirrored copy of my partitions with the OS as well as the data or can you tell it to just mirror and stipe the data and website files. If it does mirror the OS I must have to tell it which set of drives to boot from initially or something like that. Any help would be appreciated. thanks for dropping in.
