Is there a big performance difference between these 2 cards? Also, could I use 2 of either these cards in SLI and not cross fire modes?

Sli is for nVidia only.

sli and crossfire are just marketing names for what is essentially the same thing.

You also need to be much more specific about which specific cards you are comparing. THere is no such thing as a X1800 vanilla, and comparing say a X800XT-PE to a X1800XL is much closer than a X800GT compared to a X1800XT. But in basically all cases the higher numbered part will still win overall.

Actually not always. An X800XT PE is faster than an X850XT, X850 Pro. 6600GT, 6800GT 6800NU, 6800Ultra are faster than a 7300GS (not to be confused with a 7600GT) . In most cases higher numbered cards are faster but there are several examples where they aren't. Its not worth attempting to crossfire X800 cards that aren't SM3.0 capable either. If you're going to do it i would do it with X1800xt-1900xt cards to make it worth it.

Right, when I said "in basically all cases the higher numbered part will still win..." I was speaking to the original question: X800 vs X1800. I only included "almost" because IIRC an X800XT-PE would be faster than an X1800XL when the older card defaults to SM2.0 mode in a newer game.
