Im building a pc configuration, and my options are A8-7600+R7 240 or A8-7600 R7 250X, if i had to guess the 250X has to be better than the APU DG right?

Yes, the 250X is vastly superior. It's basically 2x the (almost useless) R7 240. While dual graphics is also 2x an R7 240, crossfire is not at all recommended.

TBH at this point you will have a hard time finding any new 2xx. Even 3xx stock at this point is running low.

Is there a reason why you are going down this path? Dual graphics setups are almost always more of a headache than an equally potent single chip solution. Between frame pacing and profiles and whatnot there's just a lot that can go wrong here. Is this a system from a vendor or are you building the system yourself? If you are rolling your own I would HIGHLY recommend a cheaper iGPU disabled Athlon chip (perhaps one with an unlocked multiplier) and putting that savings towards a more potent GPU. Better yet, this is a really bad time to build an AMD based system as a new platform will be replacing FM2+ in a matter of weeks and this platform will have far greater support in the future (1st gen Zen support will be a given in most cases) whereas FM2+ is a dead end. There's plenty of us here that would be more than willing to assist with a build as well. If you do need a system ASAP, I'd check out the for sale/for trade forum and grab a used combo as you'll get way more bang for the buck that way.
