Quick question regarding RAID 0

Do two Hard Drives each having a capacity of say 36GB when in RAID 0 give 72GB of Storage or 36GB? I'm just contemplating the move over to RAID 0, but the only issue is the one of storage space.

72GB Raid 0 2 drives act as 1 bigger one. Raid 1 one drive is a backup of the other.

which two SATA drives would you run in RAID 0. Are the WD Raptors my best bet?

For pure speed, the Raptors are your best option.

Yes the Raptors and you'll have more like 69Gig of storage space after the Format.
