Does this mean it's been 2885 hours of real time since I registered for SETI and I've had my PC on and WU crunching for 1820 of those hours?

Sortof... The "CPU" time is how many acutal hours the CPU spent crunching... There may have been times when the CPU was not 99+ % crunching, the machine had rebooted, and/or the process was waiting to upload/download, which would subtract from the total "clock" since you registered and accounts for the difference in times.
