Questions to ask when taking over a website from another webmaster

A small restaurant approached me dissatisfied with their current web hosting / design service. All of my sites to date so far have been new ones, in which I register the name on godaddy and then do the required setup in my telnap account.

My question to the forum is what questions do I have to ask the current design company to get control of the current site ? I would really appreciate a bullet point list of everything I would have to ask about DNS, nameservers, logins, etc so that I come off as a professional I don t want to bumble my way through, especially if the current service doesn t want to give the site up.

What is the web application framework?
What is the database?
Will you provide a dump of the database?
Do you have any proprietary controls embedded in pages?
