Questions regarding setting up a RAID 1

I've never set up a RAID array before and had a couple of quick questions. I'm building a server for the office and want to set up raid 1 (mirror) on two 120gb drives.
System Specs:
A64 3000+ Newcastle
Soltek K8ANEe-GR
2 X 120gb HD's (Haven't decided pata or sata)
1gb pc3200 corsair
NEC DVD-RW

Questions
#1. Should I buy SATA or PATA drives for the array? Someone recommended using PATA in case I had a problem in the future with one of the drives and wanted to easily get data off it in another pc or whatever. Do you agree?

#2. If I use PATA drives, what is the best way to set them up? Do I put each hard drive as master on it's own ide channel (ie HD1 on IDE1 and HD2 on IDE2)? If that is the case, what channel does the DVD burner go on? IDE3 on the Soltek motherboard is PROMISE, can I just put the dvd-rw on that? Obviously, if I go with sata hd's all of this is avoided because the two hd's I can put on the native sata ports and the dvd-rw can go on the ide1 channel.

Let me know what you think and if you got any quick tips regarding the actual raid setup process it's appreciated.
