First, can you buy the standard edition with one or two license? Anyone had any problems running 2k3 on a laptop? Lastly, are there any software conflicts, or XP Pro preferred software?

Unless you are doing development, there is no reason to run 2K3 on a laptop. It is a server OS, not a desktop one.
