Questions about fan headers on MoBos

So I just recently ordered a Gigabyte 790FXTA-UD5P and plan on attempting to try my hand at some=what serious OCing.

My question is, is that on this MoBo I count 5 fan headers. 2 of which, CPU and SYS_FAN1, appear to be a 4 pin header instead of 3 pin. I am assuming that means the 4 pin headers are PWM.

My question is that I am thinking about installing 2 new 120mm Fans in my Silverstone TJ-06 and I am wondering what would be the best fans for my setup and is there a big difference in using a PWM fan and a non-pwm fan. I have been seriously considering getting 2 of the Noctua NF-P12-1300's from Newegg but that got me wondering about PWM fans since I have a system fan header with PWM.

I thought that if I used a 3 pin fan that plugged into the MoBo, the MoBo would control the speed of the fan based on temperature. Is this not correct or are the fans going to spin at the same speed no matter what, based on what the fan manufacturer says its designed for?

If you made it through my post and can grasp the idea of what I am asking, I'd appreciate some feedback lol.

Oh and I also bought the NH-U9B SE2 cooler for my CPU. (Dual 92mm fans)
