Questions about building a server

Ok im wanting to build a server so that i dont have to pay for hosting fees and can access files on my network easier. I have a couple questions though. First what would be a good setup i want it to have at least a 300GB HDD and not really sure what is good for a server i would like to keep it around $1,000 or lower and i will be putting linux on it not sure what distro yet though. Also would it be smarter to put 2 160GB HDDs in it or possibly 2 200GB HDDs and then set it up so that my web sites are on 1 HDD and all the files on my server are on another. And what should i do security wise.

hard drives are about the only thing out of what your asking that i can comment on. id say, if budget allows, get two smaller hard drive (like you said, 2x200 or so) and put them in raid 1. that way, you get redundancy for your files, and the access speed of raid 0.
