Question on the Iphone, Iphone 4 and iTunes

So I am about to receive my brand new iPhone 4 (previously had a first generation iPhone 2G). I get my iphone 4 on tuesday.

I want to do the following:

1. Transfer all my apps, contacts, pictures from one phone to another.
2. Have itunes stop deleting my stuff, when I sync. I just sync'd the phone and it cleaned out my apps on the phone (I'd like to keep the apps on the computer but can find no way to transfer the apps out of the phone on to the computer, hence the problem, so I had to just download everything again ugh!
3. Clean out the iphone 2g so I can use it as a ipod touch or something. Perhaps jail break for worldwide travel. I know it works without a sim. However should I do wipe and activate the 2g right before I transfer everything to the new one.

So how is this all possible, I am lost... help!

Wrong forum, but I can help.

1. Backup your old phone, and when you plug in the new one, select "Restore from Backup." This transfers settings (not passwords though), contacts, and pictures. No Apps (at least when I did it... I had no apps in my iTunes at the time)
2. Plug in your old phone, right click the phone icon in the left panel and select "Transfer Purchases," and sync the new phone.
