I am looking to add an outlet in my basement off an existing junction box. All that will be plugged into it will be a lamp. I have some extra wire that says Romex Simpull AWG 14/3 CDR w/ AWG 14 Ground Type NM-B 600 volts printed on it. It has Red, White, Black, and copper ground. Is it ok to use the wire and just not use the red, as I would just be connecting ground, white and black to like colors in the junction box?
 
Sure. Why not?
If it was me, I'd cut the red wire flush with the insulation on both ends to avoid any possible mistake later, but other wise, it should be fine.
 
Yeah I'd cut the red wire and stick a small wire nut on each end to protect the bare exposed copper. Also make sure to pick up a GFCI outlet.
