LS20 substitued the Bacardi 151 below for the Amaretto. If you're at a bar, this is what they're going to do because they don't have the time to heat the Amaretto until the alcohol vapor collects.

we always did it the easier way......with the 151, much quicker🙂

Some drinks have a sugar cube floating on top of them that is lit. I don't know if you put something in the sugar to get it to light or if it burns on it's own.
