Question about Raid!

I am going to be buying the Abit KT7-RAID board for a new athlon pc i am building. i am not too sure exactly what raid is, but i heard that its a way of mirroring your devices.

I am buying a Maxtor Diamond Max Plus 40Gb HD and its ATA100 (UDMA100). The raid I/o on the board i want to get, are the only 2 that support ATA100. Would it be ok if i only attach 1 drive to them rather than mirring them. What setting do i need to use? Is there any point in having a RAID board then?
