If i have three hard drives is it possible to only run two of them in a RAID 1 and have the third one not part of the array? or do all drives in a system have to be part of the array? Is it also possible to have two different types of RAIDs in one system?

Thanks for the info.

Yes it is possible to run only some drives in an array. And so long as the controller supports it, yes you can have multiple RAID types and arrays in one system.
