Is there a way to configure it to scan emails incoming and outgoing in Mozilla Thunderbird and other personal email clients?

I believe that the corporate version of Symantec/Norton Antivirus only has integrated MS Exchange client protection. You'll need the consumer flavor of NAV to get personal email client protection.
