Question about naming trademarks etc.

Suppose I want to create a company called Foobar Consulting Agency.

There already exists other Foobars, but they are called Foobar Church, Foobar Publishing, Foobar Pizza. Can I still use "Foobar" but with the words "Foobar Consulting Agency"?
 
Usually if you are not in the same "market of competition" you are okay. Sometimes courts will also look to see if there are attempts to conduct fraudulent activity.

Laws will vary state to state and I would recommend that you consult an attorney where you plan to open up shop.
