Question about iphone jailbreak backup

I'll be upgrading to 3.0 when it's released, but also plan on jailbreaking it immediately to keep the few apps and themes I still plan on using. Where are the apps/themes stored on the phone so I can back them up and then put them back on when updated?
 
There's an app in Cydia that will do this for you - I forgot the exact name, but I believe it's App Backup or something like that.
 
Looks pretty solid, thanks guys. I looked at springjumps and I have already solved that problem w/ Categories. It lets you create folders on the springboard and dump apps into there. I now have a folder for games, and one for utilities instead of 7 pages of apps randomly assorted.
 
I arrange my apps in a certain order, each page has certain types of apps. It takes a little extra time but not really any more than using Categories. There are blank pages for new apps in each page so any new apps installed gets jumbled in but it's pretty easy to sort since your basic pages are done. Just move the new apps to the proper page. From there, I just use SpringJumps to get to whatever page I need.
 
Well just to tell everybody, that aptbackup app was friggin terrible. I followed the directions to the T, and all it did was remove all of my apps that were already on my iphone and didn't restore a single 3rd party app. Now I'm looking at a good hour of getting all my apps back on my iphone. In the comment section there's been others who had the same prob, but I went ahead with it anyway assuming they just didn't follow directions or something. The app is just worthless
