Question about changing cellular carriers

I've finally decided to switch cellular carriers, but I have some questions about number portability. What is the procedure? Do I set up service with the new company first, request the port, then cancel the old service? Or do I notify the old company I'm cancelling first? I'm very confused by the whole thing. Thanks for any help!
 
When you sign up for service they port the number, do not cancel your old service first because you will lose the number.

BTW, bring your old cell phone bill with you when you sign up for the new service, makes life alot easier most of the time.
 
Would ordering the phone online cause a huge hassle then (on account of not being able to provide an old bill)? I ask because I can get the phone for free online but not at a B&M.
