Get the Video Downloader plugin for firefox. It will let you download all .flv movie files from sites like youtube and google video. You can then either play them in an FLV player, or get a converter to transfer it to an avi or mpeg or whatever. I also stumbled upon http://vixy.net/ which apparently converts flash videos to whatever format you want. I haven't tested it, but you just drop the URL of the movie in there and you can download your new format.
