Here is what my system gonna be.

Mobo: Still undecided, but something nForce 4
CPU: either Athlon 64 3200+ or 3500+
VC: Ati or Sapphire X800XL 256MB pci-e
Mem: Apacer DDR2 2x512MB
HD: Maxtor Diamondmax 10 U-ATA 250GB
Optical: Lite-on 52x24x52 CD writer, 12x DvD player
Sound: Audigy 2 ZS

I am also gonna network, so I will have an extra ethernet card on top of the one on-board.

I am not overclocking, so what is the wattage of the case/psu I should be looking at?

Look for brand more than the wattage. If you want to get the case and PSU together, Antec is a very nice option. Something in the 350watt or above range should be just fine from a good brand like antec.
