Why can't you get back on?

boat is moving rather quickly, water is extremely cold.

you fall in and I believe by the time the boat can turn around to get you you're already in hypothermia and have sunk. I believe they explained it earlier about the odds of you surviving overboard are very slim unless somebody gets a line out to you almost immediately.
