Could someone post a guide on how to setup a Remote Desktop Client?

I have a PC that uses Windows XP Pro and a Macbook. Is it possible to do encryption? I would like to remote in to my desktop from my Macbook or from anyones PC outside my home network. Is it safe? I have setup policies that after a certain amount of failures, to lock the account in case someone tries to do it. If I were to setup encryption, how would I really know things are encrypted?

I have that installed and I'm using it right now on my LAN. I'm trying to find out what I need to do to have protection when I connect from outside the network.
