Professors that have major assignments due on major holidays are dicks

I'm in a particularily intense class right now.
Thus far this semester,

1) Massive programming assignment (write an assembler) due on Superbowl Sunday
2) Major (as in, one of five for the semester) homework due on Valentine's Day
3) Massiver programming assignment (modify an existing microcoded datapath/state machine computer to support interrupts and exceptions) due on Easter Sunday.

1) Programming labs are due on Sunday. I have had assignments due Sunday night/early AM hours on Monday morning for nearly every semester that I have had.
2) I don't procrastinate. Some of these labs push 20+ hrs from start to finish. Since I have about four classes at this level of commitment, I can only do so much in advance.
3) Superbowl Sunday and Valentine's Day are significant enough for those who have things going on besides schoolwork.

If you can't hack it, don't go to college. If you have "things going on besides schoolwork", let me let you in on a little secret: Your schoolwork is probably more important that getting drunk and watching a football game (not that there's anything wrong with doing the latter :) ).

Approximately, 0 hours a week.

If time is such a problem for you, register in less classes next time. You know what the workload is going to be before you register for the classes; it's not like all of a sudden you've just discovered halfway through an EE major "OMGWTF, classes require time... When did this happen?!?!?"

The majority of my assignments are due on weekends - electronic submission. I prefer it that way.

Time management. Learn it, Love it. Or procrastinate and roll the dice.
