If I'm going to do lots of math intensive simulations using MATLAB, what would be the best processor to get? Intel/AMD? and can dual processors help me?

Forget intel. AMD processors are best ones for that. I also use matlab and it works faster in my old AXP 2400+ than in the fastest P4C. That is because the more powerfull athlon's FPUs.
But if you need even more power, get A64, the FPU have been improved and the integrated memory cotroller would run matlab and simulink simulations faster.

Look a the mathematica 5 benchmarks

Mathematica is similar to matlab, so there you can see the AMD advantage using this kind of applications.

It would depend on what you to do in Matlab. Somethings the P4 is better in, especially using an optimized Atlas DLL or Goto BLAS and somethings the A64 is better in. If you were to use the default Matlab bench, a top-end P4 should win in LU, FFT and Sparse and the A64 should win in ODE. And no, Mathematica shares very little similarity to Matlab.

I agree with what Accord99 said. It depends on the application. There are some optimized ATLS DLLs are out which should help the performance with each CPU.
