Problems with 360 transfer cable

I just bought a 360 slim 250gb to replace an old 2006 360 that fried earlier this year and when I used the transfer cable it carried over a lot of the files, but seems to have screwed up with others. Some of the saved games seem to have made it through, and I've retained my mass effect and Oblivion saves. But underneath those files on the list a lot of the game files now say "unknown game" on the microsoft 250gb post-transfer. Sure enough, some of the games I own now have me starting at the beginning, as though I had no saves on them.

Yet, when I switch to my old profile that I also transitioned I still retain all the achievements from complete play throughs. What could cause this and what could fix it? I'm not able to connect to xbox live due to the lack of broadband available in rural country in the US (It sucks balls, I know) but I don't see what that would have to do with a file transfer. Could it still be a factor? Everything from the old and new 360 consoles and harddrives and transfer cable are all official Microsoft brand and have never been tampered with. Also, is there a way to get rid of the blank profile on the new Slim so I don't need to swap in my old account every time I turn the xbox on? It's annoying.
 
Aren't achievements saved on Microsoft's servers? I think you'd always have those regardless of having a new xbox.
 
Yeah, except I don't have the means to connect to Xbox Live as I had stated in my post. So I'm pretty sure that wasn't the source. 😉
 
When you do the data transfer, does it erase the entire hard drive of the old system? I was going to suggest you try transfering the saves via a USB drive from old to new system, but if they were deleted that doesn't help.
