change locks on freezer.
different key/lock for each freezer.
separate inventory for each freezer.
limit each person who is given a key to a specific freezer.
any losses will be tied to one person and one freezer/key.

2 Ideas
1. Control the keys.
2. Put out two new cameras, one obvious and one hidden. When your suspect destroys the obvious one make sure the hidden camera captures it.

For a funny one... put a ton of laxatives in your next batch of perogies. Watch the bathrooms.

Can you even carry ten bags in one go? You probably need some time or a few people. Think it's time to spend a night in the freezer.

1st, confirm this missing food isn't spoilage (a few fell on the floor, got overcooked, etc).

Or, maybe it's eaten by the staff as they prep it for serving?

Lastly, just confront the people who are in the kitchen. And tell them you can't let this continue.

I like the bear trap idea. Even if you don't catch the theif, you'll catch a bear who will then maul the theif. Then you now have a bear security guard to stop any future issues.

It's win win

I like this idea of individual accountability for each freezer.

The TV station did show a story about a woman that set up a hunting <motion active> camera in a trash can and she did catch the bad guy on video. He was her next door neighbor and he is now in jail.

Seems to me if you segregate the keys, you don't need cameras. The the person that has missing product is the thief.

Tell the kitchen staff that if this continues, people will get fired.

Given the locks on the doors and the camera, there's really only one possibility that I see as realistic...
