Printing to an Epson 600 thru NT server

Trying to set up a quick fix for my fiancee by setting up an Epson 600 Printer on my NT server here at home, so she can access it and print to it from her Apple Cube. Its just flat out not working yet, anyone have any ideas? LMK if any suggetstions!
