Is the latest Prime95 recommended to run on the latest intel processors for overheating and overclocking testing ?

You can pretty much use any of the versions. If you use a really old version, you have to make sure that you set affinities, and open multiple copies. If it's a newer version, it will detect how many threads/cores you have and ask you if you want to proceed with testing on the desired amount.. But other than that, yes....you can run the latest for testing. Just use small and you should be good.
