What settings do I configure in Prime95 for overclocking and for burn-in tests? How much memory should I enter in those fields? Also which tests should I run.

for testing an overclock use small fft's...

for memtesting... don't use prime95... use memtest v. 1.55

There is a tab called "CPU" under Options and there it asks Hours per day this program will run, Daytime Available Memory, Nighttime Avail Memory, and Daytime begins", etc. Do I need to mess with these?

Nope, just run the Small FFTs in Torture Tests for a good few hours.

For Cpu stress testing use the Small FFTs stress test
For Cpu and RAM stress use the Blend test.
For system stability we all run the Blend test for at least 6 hours, 12 or more is recommended.
