I actually thought Hannibal was good (though on balance I would give it maybe two stars) given the dreadful source material. I loved all of the Thomas Harris books prior to Hannibal, which was almost unbelievably disappointing. On the bright side, Red Dragon was a very good book (Manhunter was good as well IMO), but the film is to be directed by Brett Ratner, known up until now for his music videos and boneheaded action comedies. I have high hopes nevertheless. In a funny way I think they would have been better off bringing back the talented Michael Mann to direct RD, though that would be the first time I could recall the same director remaking a previous film.
