Post your sauce and marinade recipes and secrets...

Alright i'll start....

in a blender add:

1 cup chop fresh cilantro
Juice from two oranges
Juice from three limes
2 tspn oregano
5 cloves of garlic, coarsley chopped
1-2 tbsp ground ancho or other pepper...
1 tsp salt
1 tbsp black pepper
1/2 cup olive oil

Blend it for a bit (5 secs should be plenty) and you've got a really great marinade that tastes great on beef and portabella mushrooms.

I tend to use this marinade on flank or skirt steaks. Grill over a very high heat, let sit for 10 minutes and slice across the grain. Build you own fajita-style tacos....

Many cloves of fresh crushed garlic
3 times as much rosemary as thyme
liberal salt pepper and olive oil

Throw it all in a freezer bag and marinate sirloin steaks for 4-12 hours

for steaks i usually put some dales and coke into a zip lock, add meat, squeez out air, and marinade for a long time (min. 1hr...usually overnight)

I just bought one of those Jack Daniels marinade packs (just add meat and go) i am going to try it 2marrow and give you results...

if you like red hots...add some teryoki sauce, dales, and coke into bag..add red hots...squeeze air out and let sit in fridge for min of an hour...very very tastey...oh..make sure to open both ends of the red hot...you can close it with a lighter (melt it) before you cook 🙂
 
I marinated boneless chicken breast tenders overnight in italian dressing and grilled them tonight. Delicious.

6 skinless, boneless chicken breast halves - cut into chunks
4 limes, juiced
1 cup water
2 teaspoons ground allspice

No measuring, but I make a marinade for Steaks that my whole family likes:

1 Qt. Lemon Juice
1 Cup Orange Juice
Several liberal dashes of Worshestershire (1/4 Cup?)
5-6 Dashes of Liquid Smoke (Hickory or Mesquite)
1/2 Cup A-1 Sauce
1/8 Cup Apple Cider Vinegar
Couple Tablespoons Black Pepper
Couple Teaspoons salt

Marinate at least overnight, (the longer the better).

Sometimes I get creative and toss in whatever I find in the spice cabinet or refrigerator, Mrs. Dash, Heinz 57 Steak Sauce, etc.
(Never use Garlic, it'll make your steak taste like Bologna!)
 
Ingredients

1. WHOLE black peppercorns, or even better get a variety (white, black, red)

2. Fresh minced garlic

3. Kosher salt

4. about a cup of butter


Instructions

1. Melt butter in a saute pan

2. Saute everything but the salt for about 30-40 seconds.

3. Salt the steaks, be sure to rub the salt into the meat so it won't be washed off by the marinade.

4. Pour mixture into a ziploc bag and throw in steaks/chicken/ baby seal etc...

5. Grill to medium rare, brushing the butter mixture over the meat as you turn it.

6. Eat

7. You can actually hear your arteries clogging up, but it's soooooo worth it!

I'd cut the orange out and add in some worcestershire sauce.
 
A good steak[Ribeye, Filet, Porterhouse, NY Strip] does not need to be marinaded!

Flank, skirt, or London broil, sure.

That's not true. Marinades are used to bring out a certain theme in a meal. I'll use a chipotle marinade when I have southwestern side dishes, etc.

People that use marinades to cover up the fact they can't cook is the problem 🙂
 
Hmmmm. My steak meal theme is... STEAK!

Ribeye, roasted sweet potato, roasted carrots, small green salad, and sauteed onions and mushrooms.

A marinade can impart some flavor but is usually used to tenderize a cut of meat.

A good steak can't be significantly tenderized except through an enzymatic tenderizer which most home cooks don't use. The muscle fiber is too dense to be penetrated. A good marinade is used to flavor the outer eigth inch of meat or so...

At least that's my understanding.

I do find that using oil in the marinade helps to preserve moisture in the meat though...
 
Always use some kind of acidic salad dressing (whichever one is your favorite). Balsamic vinegarette FTW.
 
Man I got an awesome grill from my wife on monday, assembled it on tuesday and it's been raining since. Fsck New England Weather!
