On a whim, I decided to try making my own mayo:

The consistency turned out excellent, but the taste was too "lemony" for my palette. I did some googling and found a number of recipes, ranging from adding mustard powder to replacing the lemon juice with vinegar.

Do any of you make homemade mayo and have a good recipe to share? 🙂

Something about the acid from the lemon juice helping the state of emulsion or something. You can also use vinegar, which I'll try next. But it has a strong lemon taste to it, which doesn't taste anything like real mayo. The texture is awesome tho...it's like a thick whipped cream, like stuff you would have at a gourmet sandwich shop :thumbsup:

What type of oil do you use? I'm reading the comments on the Cooking for Engineers page and some people are using EVOO and grapeseed oil. I just used veggie oil, as recommended.
 
I want some Japanese mayo, had some in Australia. It was the funny looking kind in a squeeze bottle with a baby on it, kewpie or something like that...
 
Step 1: Whisk 1 egg yolk, 1/2 tsp salt, 1/2 tsp dry mustard, 1/8 tsp sugar in a bowl
Step 2: Whisk in 1 tsp lemon juice and 1/2 tbsp white vinegar
Step 3: Whisk in 1/2 cup oil
Step 4: Whisk in another 1 tsp lemon juice and 1/2 tbsp white vinegar
Step 5: Whisk in another 1/2 cup oil
Step 6: Let sit for 1 hour
Step 7: Throw it in the trash and punch yourself for eating something so disgusting

Oh - and it really helps if you have a food processor. You just pour it in. 🙂

Have one, haven't tried it yet. Just used the blender because it was convenient 😉
