So I want to expand my fish dinner horizons. Mostly I make salmon (grilled). Bonus points if you can do the recipe well with frozen fish (I don't like to shop that often). Whatcha got?

And no funny business!

Oh yeah, I should probably start off:

5-star Salmon

Ingredients:
Salmon fillets (I buy the pre-packaged frozen kind)
Garlic salt
Salt (I like Kosher)
1/3 cup lemon juice
1/3 cup light brown sugar
1/3 cup water
1/4 cup vegetable oil
1/4 cup soy sauce

Directions:
1. Thaw the salmon fillets
2. Season generously with garlic salt
3. Mix lemon juice, brown sugar, water, vegetable oil, and soy sauce in a large bowl
3. Place seasoned fillets in the bowl and keep submerged for 15 minutes or so
4. Grill in aluminum foil packets for 15 to 20 minutes

Tips:
1. Lightly season with more garlic powder plus some kosher salt and brown sugar during the last few minutes of cooking
2. Pour some liquid mixture into the packet before grilling, it makes a great sauce!
3. Open the foil packets a bit to allow air to circulate while cooking, but keep the corners sealed so that the liquid sauce doesn't leak out
4. Be sure not to overcook them; salmon turns light pink when done
5. From what I've read, fish falls apart if you marinate it overnight, so don't do that

2 lbs fish fillet
2 medium chopped field tomatoes
1 crush garlic glove
1/4-1/2 diced onion
1 tsp brown sugar
1 tsp fish sauce
a couple dash of salt
a couple dash of basil (fresh diced is best)
a couple dash of fresh ground black pepper
1/4 cup of oil

fried fish in oil till brown then transfer out off wok.
heat garlic in hot wok at medium heat for 15-20 second, then add onion & stir till onion become semi transparent.
add tomato, fish sauce, salt, sugar, basil, ground pepper, and cook the sauce for 1.5-2 minutes.
put the fried fish in a serving plate and pour the tomato sauce on top of the fish before serving.

consume with steam rice.

lawlz. Pretty much.

Wrap fish in baking/parchment paper mit lemon and butter (and optionally parsley and black pepper or add later) then wrap in foil and cook. Serve mit steamed veg such as asparagus and/or carrots (mit more butter) and rice pilaf.

Throw butter into an already hot frying pan. Put fish in, and put some salt on. Keep moving them around until they're done.
Take cracker crumbs and a beat egg. Dip your fish in the egg and roll in the cracker crumbs. Fry with butter. Both are delicious.

Take the fish fillet and do the following:

Mix some olive oil, soy sauce, half spoon of powdered sugar and a couple of drops of worcestershire, and make a mini marinade.

Slather the fillet in marinade for about 20 mins.

Then, take come cayenne pepper, chili powder, and some crushed black pepper, and make a dry sprinkle.

Take the fish and coat it with the dry ingredients to create a decent layer of spice crust on it.

Then put it in a very high heat broiler for 5 minutes.

You get a very nice outside crispy layer, that is spicy and savory, and a very juicy inner fillet. No need for salt because of the soy-sauce.

Enjoy with boiled rice and steamed veggies.

Works with most fish I have tried with.

What are some good rice recipes that go along with fish? I usually just have plain rice (sushi or jasmine), but I wouldn't mind trying some flavorings...

I usually make plainish rice as a relatively neutral counterpoint to other elements o' the meal. However, bog common steamed or steeped is excessively bland so it is most oft Basmati pilaf (sometimes mit a li'l Kavanagh/brown variety thrown in): heat extra virgin olive oil, add black pepper 'n' salt, add rice for a mo' then almost twice as much water, stir, bring to boil, stir again, and reduce to simmer for 20 min then off heat for 5 to reabsorb water vapour. Et voila.

Tilapia fillet, flour, egg wash, coat with panko bread crumbs that have been "treated" with Prudhomme's seafood magic, garlic, and cayenne pepper. Pan fry for a few minutes per side until fish flakes.

You can use this recipe on any white meat fish. I stole it from a friend.


1) Get some BIG portebello mushrooms, 1 for each serving.

2) Pop the stems off the shrooms and set them aside. Quickly saute the caps in a little olive oil and garlic, just a few minutes a side. Take the grilled caps out of the pan and put them bottom side up on a cookie sheet.

3) Put a little fresh gound pepper and sea salt on each side of fillets trimmed to the size of the shroom caps. Quickly brown them in the same pan you used to saute the caps. Once both side are nice and golden-brown take them out of the pan and stack a fillet on each shroom cap.

4) Chop up the shroom stems you saved and add a minced garlic, onion and celery. Make enough so you can put a decent scoop on top of each fillet. Saute them in the same pan for a few minutes. Put a generous scoop on top of each fillet.

5) Top off each shroom/fillet/saute stack with crumbled feta, grated parmesan, and a final drizzle of good quality olive oil. Bake it in the oven for about 15-20 minutes until things are browning and starting to flow.

Serve with chicken stock risotto, salad, and a spicy red...an unbelievable combo!

Metal and acid donut mix. That's why I specify baking paper then seal with foil.

I probably know about 30-40 seafood recipes. What's your favorite, sweet, spicy, herbed, grilled, or blackened?

any sea food paella dish will be good with fish, so as seafood cajun rice dishes.

I tend to like simple paella recipes because it only take 3-4 ingredients to make and often produce better result than the complex ones.

paella
rice steam in broth or juice.
a pinch or two of herb/spice (mild)
a pinch or two of salt
