I'm not real big on tradition in cooking. Besides, you HAVE TO use bean chili if your going to make chili dogs.

Just don't burn the onions. Also, depending on the fattyness of the beef, you may need to add aditional oil before the onions will cook properly. And sh1t, I forgot to mention that you need to add the beef back in when you add the spices in.

Tick, you should mention that you are using already cooked beans or it won't finish in 25min.

should really soak beans over night then parboil them while cooking everything else.

Thanks, good point. I'm talking canned already cooked beans in all my recipies. You can also, like you mentioned, get raw beans, soak em for 5+ hours, the parboil with a little salt till ready.

My recipe:

3 medium onions, minced
2 lbs lean beef, finely chopped
2 lbs cubed or ground pork
1/4 c oil
1 1/2 cloves garlic, minced
1 can (7oz) whole green chiles, minced
1 can (7oz) whole jalapenos minced
1 can (15oz) tomato sauce
1 lb whole tomatoes, finely chopped
1 T cumin
1 t salt
1 t oregano
1 T dry mustard
1 shot of tequila or whiskey
1 can beer
2 jars or (1.5-2oz) chili powder ? Add slowly and check for taste
2 beef bouillon cubes

Brown onions, and beef in oil. Stir in garlic, pork, chiles, cumin,
oregano, salt, dry mustard, tomato sauce, tomatoes, tequila, beer,
chili powder and bouillon cubes.

Bring to boil, then reduce heat and simmer 4-8 hours. Stir
occasionally. Do not stir the last 30 min before serving.

That's the way it is with my dad's recipie. I had to swear to keep it in the family. Haven't tasted anything as good yet.

hint - there is some sugar and crackers in it.

Mine's really simple... 1 lb. browned hamburger, 1 can kidney beans, 1 can pinto beans, 1 cup frozen corn, very liberal sprinkling of Emeril's southwest seasoning, a half-teaspoon or so of chilli powder (with seeds), half a can of diced tomatoes, handful of shredded colby jack cheese. Cook together first at medium, then at low. Simmer a long time stirring occasionally.

Actually had this for dinner last night (sans the tomatoes though, I was out of them). Good with a big glass of milk.

EDIT: Drain everything before it goes into the pot.

This one is getting rave reviews on Recipes.com:

INGREDIENTS:
2 pounds lean ground beef
1 (46 fluid ounce) can tomato juice
1 (29 ounce) can tomato sauce
1 1/2 cups chopped onion
1/2 cup chopped celery
1/4 cup chopped green bell pepper
1/4 cup chili powder
2 teaspoons ground cumin
1 1/2 teaspoons garlic powder
1 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon dried oregano
1/2 teaspoon white sugar
1/8 teaspoon ground cayenne pepper
2 cups canned red beans, drained and rinsed

DIRECTIONS:
Place ground beef in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble, and set aside.
Add all ingredients to a large kettle. Bring to boil. Reduce heat and simmer for 1 to 1 1/2 hours, stirring occasionally.

LEMON? BAH!! When I make this dish, I leave out the lemon. It's the authentic way - adding lemon to any beer-based dish is what pseudo-intellectual lightweights would do to try and fake that real "bar" ambiance. That priceless aroma of yeast, barf, tobacco and testosterone cannot be replaced by a little lemon. Hah.

If you want to make Cincinnati Style Chili... you need a crock pot.


I don't know the specifics, but I know how it's made.

Throw a couple pounds of ground beef (un browned) into a crock pot, add a couple cups of water. Turn it on, keep mashing up the beef until it makes a sort of "meat paste".

Don't drain it.

Add a couple cans of tomato sauce (Make sure it's sauce, not paste.

Add chili powder, cumin, unsweetend CHOCOLATE, some brown sugar.
You can also add some garlic/garlic salt, hot sauce, paprika, pepper, salt... just taste it and see what it needs.

Keep it covered and keep stirring it all day.

It shouldn't be thick. Serve over spaghetti with MOUNTAINS of stringy cheddar cheese.

If a recipe for Cincy chili tells you to add things like peppers and onions... it probably sucks. The thing about cincy chili is that you don't add things to the chili, you throw it on top of the pile.
