Set the camera on a tripod so it's not moving, and all your shots will have the exact same background. Take a bunch of shots in a row. Photoshop the bike/rider from each frame into the appropriate location on the previous frame. It's easy to line up the bike in the correct position because the background is identical in all the pics.

because each frame contains part of the previous frame, you just set each one as its own layer and move them so they line up and then erase the parts you dont need
