So, with the help and input of you all here I've decided to go with the following for a new build:

Asrock B450M Pro4 mobo
Ryzen 5 3600
Corsair Vengence LPX 16GB DDR4 3200 (2x8GB)
Samsung 512GB 970 PRO NVMe

This system will be running Win10 x64 and used for some gaming (nothing intense), photo post processing, and general time wasting😉. I am salvaging my Antec 550w PS and HD7700 graphics card from my current system, along with my Samsung SSDs (finally shedding my last spinner, a WD Blue 500GB turtle). This will be almost certainly my last build and I managed to stretch my budget to accommodate the components listed.

My only real concern is matching the CPU with proper RAM. The Corsair RAM I picked does not appear on the QVL list for this board, but ADATA does. Any concerns with that? Thanks.

Any reason for the mATX board over a decent ATX board? Cost savings? At the same time, purchasing a 970 PRO, rather than the cheaper EVO?

The board fits my case, has all the features I want/need, and fits my budget. That, and I rely on Asrock, who have never let me down. As for the M.2, it's just a choice; I don't get my panties in a bunch over benchmarks and such, and the price difference is negligible.
 
The ram should be fine I don't think they test all the ram for the QVL lists. Larry has a point about the SSD I would get a cheaper 1TB model for the same price as the 500GB Pro.
The Crucial P1 can be had for under $100 for 1TB also the Intel 660p is similarly priced.

For $120 the ADATA XPG SX6000 Pro or Inland Premium are both faster than the P1 and 660p

Yeah, I went back and forth on the SSD, and have already ordered the Pro part; my current boot drive is 500GB and it's never been over 50% full, so I reckon I'll be OK there. Thanks for your note on the RAM.

My biggest concern now is whether to start with a fresh install of Windows (likely the best route, but oh so tedious reinstalling everything) or see if a clone of my current boot drive will boot with the new hardware; I suspect it will not.
