Possible PSU Problems While Overclocking

I think that my PSU is holding me back while overclocking, or at least that what all my freinds think. I'll start by giving my system configuration.

Motherboard - DFI LanpartyUT Expert
Processor - AMD 3800+ X2
RAM - 2x1GB OCZ DDR4000
Hard Drives - 2 x Western Digital 16mb Cache 400 GB Sata Raid Stripe
DVD Drive - Plextor 16x DVD Writer Sata
Sound Card - Creative X-Fi
Graphics Cards - 2 x Nvidia 7800 GTX 256mb SLI
Power Supply - Antec NeoHE 550 watt
Thermaltake Tai Chi with Water Cooling System

Basically the oc I want is to get the processor from 2.0 ghz to 2.5 ghz which also puts the ram at its rated speed. The point where I run into problems is while gaming (Chronicles of Riddick and Need for Speed: Most Wanted). Riddick just gets real choppy and NFS will show artifacts and do some real crazy things like my car will drop out of the sky at the beggining of the race. I raised the voltage on the processor from 1.35 to 1.525 and the games ran well but when I returned home later that day the system had cut off. I realized that my ram was running at 2.7 volts which is wrong and I think is the reason it cut off so I put it at 2.8 which is its stock rated voltage at 500 mhz. When I did that the games started to do the same things as before. By the way the games run fine at stock settings. I guess one of my biggest delimmas is that I dont know how much wattage the entire system is using in the first place despite my best efforts. I was thinking about just getting that 1000 watt power supply but thats a lot of money if this isn't the issue. Any advice, information, questions, or comments are welcome and would be appreciated.
