As I said in the other thread. It's not shocking if you know ANYTHING about the most basic of biology. Believe me, I never even took a college biology course, and cholesterol really wasn't covered in high school biology.
One of the components of cells is cholesterol. Cholesterol is used in constructing and maintaining brain cells as well. Thus - eating brains means eating large quantities of cholesterol. The body also makes cholesterol. Eating cholesterol means the body makes less.
Only people who really have genetic defects or are lazy slobs need to worry about cholesterol intake - unless of course it is an ungodly amount. If you eat a lot one day but more normal amounts on other days, it simply stays in reserves in your liver (where it is produced), unless you have said genetic abnormalities that result in unbalanced blood serum cholesterol levels, such as too high LDL. The problem with high cholesterol foods is - it won't be the only fat. Fat is in animal tissue, all cells are made with fatty content - just not "bad" fat.
High cholesterol intake for a generally healthy person isn't actually the biggest worry - it is the rest of the fat, specifically saturated fats, that leads to health issues in which the cholesterol can then produce worse problems.
