My problem is that they fall way, way too fast. I'm suprised that giant metal Falco doesn't just create a singularity.

Yeah, I suck at it too. My roomate has it. I just can't do those complex super moves. I pretty much just do the basic moves.
 
Link then Yoshi then Samus. I used Yoshi exclusively on the N64 version but I switched to Link for the GameCube after not liking Yoshi as much on the GameCube. I use Young Link sometimes but me, personally, would rather have harder hitting attacks than a faster character.
 
Jiggles pwns with her massive l33t fall-asleep-on-you scream attack, even though its much harder to pull off compared to the 64 versions.
 
Actually Link isn't the best character I don't think. He's good an easy learning curve though, so it's easy to get decent with him easy on.
