Going out with some people for Japanese food tonight, just wondering how you guys drink it. I like it slightly heated for cheap sake (like ozeki) or slightly chilled for more expensive stuff (like Kubota).

Good sake is served cold and is VERY smooth.

If it has excessive "bite" to it and you're paying more than $5 for a small tokkuri then chances are you're being ripped off. I usually get the house sake (Warmed) because it's cheap and get's me drunk quickly. 😀

Sake is like a good margarita -- it's the perfect compliment for the food it goes with. I love good hot sake with sushi. There seems to be a perfect heating point where the sugar in it just begins to caramelize. If it isn't heated enough, the sake is too sweet. If you overheat it, it takes on a bitter aftertaste. When it's just right, there's just a faint hint of that edge that gives it a most interesting flavor. 🙂
