In the realm of Christian religious holidays, I would say Easter is probably the most defining holiday of the faith.

(Of course, Christmas is a lot more fun, but for what it honors, I've got to hand my vote to Easter for being the more important holiday for Christian faithful.)

Had to vote Christmas, both it and Easter have two fabulous meals within a week of each other (Good Friday, New Years), but the gifts and sometimes extra non-holiday day off or two give Christmas the edge.
