for me, i exercised a bunch of stock options, added about 15% to my annual income, i have to pay the tax on those

Exactly. I pay at the end of the year...usually around $800-$1000 b/c I don't like to let them use my money for free during the year. If you are getting back more than a couple hundred bucks it's not like "Wooohooo free money", it's your money that you loaned to the government interest free throughout the year and you should change your deductions throughout the year.

You should get a statement from the university listing the amount you can deduct for tuition.

You can also try looking on page 151 here
